FEEDING ALLERGIES
Some foods can cause adverse reactions in a small percentage of the population. However, not all problems are caused by food allergies. Only 2% of adults and 3-7% of children have allergies really.
You can differentiate between foods that cause food allergies and food intolerances causing foods. It is important to differentiate this to avoid headaches at home. Here we explain the main differences and some tips for effective action.
ALLERGIES
Involving the immune system against a component of the food (allergen) which is protein in nature. It can be caused by the creation of antibodies (immediate allergy mediated by IgE antibodies) or cell (immediate or delayed allergy), whose main exponent is celiac disease.
Immediate allergy symptoms:
✔ Less serious (and most common):
• Skin: hives, redness, swelling of lips and eyelids, dermatitis.
• Gastrointestinal: vomiting, colic, diarrhea, itchy mouth and throat.
• Respiratory system: rhinitis, asthma.
✔ More serious: anaphylactic reaction that affects multiple organ systems. The most severe manifestation is anaphylactic shock which can be fatal.
Treatment: complete elimination of the causative agent feed.
FOOD ALLERGIES CAUSING
Almost any food that contains protein can cause a food allergy, but some of the most frequently originate in children: cow's milk, egg, fish, seafood, legumes, cereals, fresh fruit, nuts.
Milk allergy-caused by casein, lactoglobulin and lactalbumin. The most common symptoms are preferably skin, but also digestive, vomiting and diarrhea.
They can vary from person to person. Not to be confused with lactose intolerance, in diarrhea occurring due to the inability to digest the milk component.
Egg allergy is caused by an allergic reaction usually caused by ovalbumin and ovomucoid, egg protein characteristics present in the clear.
Due to fish allergy fish muscle proteins. Take particular
care products fortified with omega 3 or fish oil may contain
Small amounts of protein.
Allergy to legumes have great ability to produce an allergic reaction. Generally
all are allergenic, especially lentils and soybeans. In the food industry legumes are used as thickeners gums (guar gum, locust bean gum).
Cereals Besides its importance in celiac disease, can cause allergy
immediately to any type of grain. However, it is less common than other vegetables.
Allergy to nuts Peanuts and almonds have a high risk of causing
anaphylactic shock, even if only produces mild nausea, headache and swelling
lips and tongue. Can produce symptoms even minimal contact with the skin.
Beware nuts!
INTOLERANCES
The body can not properly digest food or one of its components.
Not involve the immune system. Typical examples are intolerance
lactose and other sugars intolerances, or intolerance to some additives, such as sulfites.
Symptoms are similar to those caused by allergies digestive immediate:
✔ Nausea.
✔ Diarrhea.
✔ abdominal pain.
It can consume small amounts of food or food component, without their symptoms.
PREVENTION
✔ Provide a medical certificate in the cafeteria to avoid confusion and to learn the menu to eat.
✔ Always read the ingredients of the food that will be used in preparing the menu, taking about the list of substances to which they are allergic / intolerant to check the labels.
✔ Cooking food allergy first to avoid contamination and contacts. Handle carefully utensils (better if they are exclusive to the allergy). Do not use the same oil for cooking or ironing. Sanitize all work surfaces.
✔ Watch as mass food, sauce, soups and broths for soups, breadcrumbs.
✔ Completely remove the allergen from the diet, both the food itself and the various products that you can be taken as an ingredient. When in doubt, do not take it.
✔ Have about timely medication, especially in cases of very severe allergies.

WHOLE GRAINS: WHY THIS OPTION AT HOME?
In Europe we be quite concerned with the issue of food in relation to health (Eurobarometer 2010), but the reality is that after we make decisions not as simple as a shopping list healthy and suitable for all home.
Why are all the rage these cereals? What is really your benefit? What is its impact on health? How to identify them? With all the studies now, you can almost say that whole grains are preventive medicine. Heart disease, colorectal cancer, prevention against various gastrointestinal disorders, obesity and type II diabetes are among the diseases (very common in our population, certainly) related to the low intake of these foods. Actually there is nothing new: "your food be your medicine." Already said Hippocrates.
The supermarket shelf is full. But beware, not all dark grains are integral, not all of them are healthy (lots of industrial bakery products a little fiber ... and too much saturated fat!). The solution: learn to read labels. It takes only seconds to provide extra information on products entering home.

FEEDING CRISIS 2011: DIOXINES.
What are dioxins? Is it a real threat? A risk to consumers? This food crisis that exploded a few weeks ago in Germany primarily, is more controlled than that presented by the media.
Here we explain what is dioxin, which is the natural source of this compound, and especially how it spreads, how it affects the health of people and what are the consequences. So that we know what is happening and we can decide on the shopping cart. That does not happen as the mad cow crisis (BSP) or influenza "flu".
What are.
Dioxins are unwanted by many manufacturing processes including smelting, bleaching of pulp with chlorine or manufacturing of some herbicides and pesticides. Regarding the release of dioxins into the environment, uncontrolled burning of waste (solid and hospital) is usually the most serious cause, since combustion is incomplete. There is technology that allows controlled incineration of waste with low emissions.
How affect.
Experiments have shown that affect multiple organ systems. Once you have entered the body, they endure a long time because of their chemical stability and their attachment to fat tissue, where they are stored. An estimated half-life in the body is between 7 and 11 years. In the environment, tend to accumulate in the food chain. The higher you are in the animal food chain, the greater the concentration of dioxins.
Short-term exposure of humans to high levels of dioxins may cause skin lesions, such as chloracne and patchy darkening and altered liver function. Prolonged exposure has been linked to immune disorders, the developing nervous system, the endocrine system and the reproductive
Presence in the environment and the organism.
As the omnipresence of dioxins, all people have background exposure and a certain concentration of dioxins in the body: the so-called body burden. In general, it is assumed that the current normal background exposure has effects on human health. However, due to high toxic potential of this class of compounds, are necessary measures to reduce current background exposure.
Food sources
Over 90% of human exposure to dioxins is food, and mainly meat, dairy products, fish and shellfish. Therefore, the food protection is crucial. As mentioned above, one strategy is to source directed measures to reduce dioxin emissions.

HEALTHY FEEDING HABITS AT HOME
The study of these habits inherited from the family is well known for research on new habits that are introduced in a very pluralistic society, the likes and dislikes of our customers, which areas are prone to certain diseases ... But everyone knows that these habits are especially high emotional charge. Not just euros, nutrients and cooking techniques.
Large Covián said that it is easier for a man to change his religion that power. Maximum we understand easily beyond the practical example.
Some people can not conceive of a Christmas without chocolate nougat without coffee or breakfast. Every which forges throughout life and which will each broadcast. Why? For it seems good. Eating has a very human context. Yes, feed the horses, and octopuses, and any algae. But if we give so much importance to a particular dish a holiday family maybe is because by that we mean something.
If you tell someone that you care, that you are indifferent, did not put forward a tomato and a can of tuna but you make a good salad.

It is very helpful to have a calendar that gives us a little foresight when thinking home menu, shopping list, etc.. Besides knowing well the seasonality of food, they will draw and the highest yield (as all have their immediate consumption). Although now we can get almost any fresh produce all year round thanks to the Food Technology, siemptre not meet all its properties. Attached here a calendar of fruits and vegetables if you served.
(Pincha en el calendario para verlo en su tamaño original)
Hay otros con frutas más exóticas o de verduras propias sólo de algunas zonas, que si estáis interesados, podéis pedirnos en el buzón de sugerencias.

HEALTHY FEEDING BLOGS
Healthy ... and accessible to all. It's a pleasant surprise to see how many blogs there are on the Internet with information as valuable as "how to make an omelette", hung on the web for so many users. I mean, among many people, there are simple things like the world of "home" that are as affordable as a click. This also try to do it from this blog.
Also, always sobering comments and are the starting point for new entries.
Anyway, in your house will not notice until you "get wet" in the kitchen. But not just any modo.Y not show what one can do to prepare but simply something for yours ...You like it! Because of the photo there is a stretch of reality.
Have you tried for example to prepare a dessert that usually buy at the bakery? Not only be cheaper, but will be much healthier and nutritionally get (at least for a while) have yours enjoy at the table talking about anything. And it's catchy. Do you dare to try?

WHAT TYPES OF BREAD DO YOU KNOW?
We all know that bread is a staple in our diet, and you can not miss at home. Expressions like "be longer than a day without bread" or "bring the bread under his arm," among others, give an idea of the importance of this ancient food. All cultures have developed a product based on cereals, yeast, bread and water. This is essentially the bread.
But now there are hundreds of types in our market, and you can find which one best suits the needs of your people, to a more or less reasonable cost. You do not need the same bread snack than a breakfast sausage, or perhaps there are dentures that do not allow all the textures. Or simply, there are fans who prefer to bake bread at home, and even elaborate. What kind of bread do you know?
Here we encourage you to know this staple of healthy eating. On the other hand, the recommended daily intake is 20 to 40 grams per meal. It is a food rich in carbohydrates and B vitamins, especially.
Instead of listing a list (which would be quite extensive) types of bread, we encourage you to be a "curious / a" a good bakery and hauls you with simple recipes, snacks, ... and if you have option to you to work out something at home.
Later publish a list of most common types of bread and ways to preserve it. It does not matter that other bread.
